Blueberry
What do you do with a gallon of frozen blueberries in the freezer and another picking trip in the works… you bake! Now that we are budgeting our food more, I have been thinking of things I can make. So today I broke out this seasons first bucket and baked a blueberry focaccia, and made a lot of freezer jam. We gave away half of the focaccia and the rest will probably be gone by the end of the weekend, but the freezer jam will last awhile (the ones we keep at least.) Thankfully, Seth helped me clean the kitchen afterward. It was a rather sticky place.
Last week, Seth got laid off from work. There was a big waive of people who were let go. It was a huge surprise and is rather scary, however, he didn’t care for it much anyway. The scary part is not knowing when we will be making enough money again to keep our lifestyle. On the other hand, it is exciting that he has had this to push him into another direction and let him realize he didn’t have to work there forever. I am so proud of everything he has done in the past year and half. He has had HUGE life changes and accomplishes, and something like this is one of those falls that happens when your achieving and doing. There are so many options, and as long as that doesn’t overwhelm us, we will use it to our advantage. Soooo, because he no longer is employed with his previous company, he lost his work phone, which was his only phone. Yesterday we made a LENGTHY trip to verizon, added him on my plan, and both got new phones. Thankfully mine was free and he got a huge discount. This is our new toy(s)…
It is pretty nifty. Of course Seth is finding out every little thing possible he can do with it, and I am taking from that only the things that I am interested in.
I am not quite used to the touch screen yet, but I am sure it will get better over time. My pudgy fingers don’t care for the small buttons. Right now we are having fun making ring tones. I am trying to get the song from David the Gnome. All the recordings online are really scratchy so we are going to try and pull them off the DVDs. Oh David the Gnome, how I love you!

so sorry to hear about seth’s lay-off…BUT it is a blessing! i am still laid-off (just received my permanent lay-off letter last week…not sure how lay-offs occur stateside) and i was beaming. like seth, i hated my job and wanted something more, even if i knew i wasn’t going to necessarily make more $…funny how you grow, learn and money is not everything. i wish the best for you two lovelies! good things happen to great people!
the blueberries are divine…just ate raspberries (from my very own raspberry bush i forgot i had!), pineapple and blueberries…delish!

So sorry to hear about the lay off. That really bites, but good employers are out there somewhere searching for those great talents of his.
Where can I take the kids to scoop up a couple buckets of those blueberries? Sounds like a lot of fun! I personally love blueberries and almonds in the middle of a good coffee cake!
